Dining and Unwinding at the New Radisson Blu Aruba
The only Radisson Blu resort in the Caribbean opened earlier in 2021 near the shores of Palm Beach. With a chic urban-island vibe, the Radisson Blu Aruba delivers positive and personalized service in stylish spaces.
We had the opportunity to spend a weekend at the expansive 133-room resort, where all two- and three-bedroom suites feature separate living areas and fully equipped kitchens along with breathtaking views of Palm Beach and the Caribbean Sea.
Lush outdoor living spaces embody the effortless modern island lifestyle, with a variety of relaxation spaces to enjoy, including an adult’s only pool, a family pool, and the island’s largest infinity pool located rooftop and adjacent to the resort’s Sunset Bistro.
Offering on-trend cuisine for breakfast, lunch, and dinner, Sunset Bistro became our go-to spot the entire weekend. We shared our dining experiences there with a number of friends that popped in throughout the weekend, and all our meals were fabulous.
Standouts here were the Skirt Steak and Eggs with fresh sourdough toast on the breakfast menu, and on the lunch/dinner menu the Grain Bowl with quinoa, lentils, kale, charred butternut squash, avocado, smoked pepper romesco, and lemon tahini (our new favorite salad on the island!); the Double Cheeseburger made with U.S. Omaha Beef; El Club with smoked turkey, bacon, avocado, and roasted garlic aioli; the Catch of the Day (it was fresh mahi mahi when we dined); Penne Arrabbiata with red chili, capers, and basil (gluten-free pasta available); and the Grilled Jumbo Prawns in coconut yogurt sauce with lemon and sumac. Whether you are a guest staying at Radisson Blu or another property, or living here and looking for a new spot to try, the food, cocktails, and service paired with a chic rooftop vibe with views earn Sunset Bistro a spot on your Aruba culinary agenda!
