It’s Springtime at The Secret Garden with Chef Griet
The Secret Garden, Aruba’s exclusive private in-home dining experience and culinary collaborative, hosts several culinary events weekly, including The Chef’s Garden by Chef Griet Vanbrabant and Papillon Restaurant. The Belgium chef refined her skills working in international, award-winning restaurants all over the world, including the 3-michelin-star restaurant El Bulli in Spain, Rockpool in Australia, and Pujol, Wallstreet Journal’s pick as best restaurant in Mexico City.
Chef Griet offers seasonal menus, and her new “Spring in the Garden” menu stays true to her dedication to offer the freshest, locally-sourced ingredients in her fascinating new six-course menu. Says local columnist Rona Coster, who recently attended the debut of the menu, “Chef Griet came out of the kitchen to introduce each dish. She is a combination chef, chemist, magician, and her new Spring in the Garden Menu is not just for foodies, or food snobs, but for anyone who enjoys good food, and/or cooking.
Three amuses star in the first course: prosciutto on sourdough with mango caviar, quail egg on a dollop of black truffle, and an “edible rock”–a deep purple/black potato, crowned with local pica di papaya
A creamy, locally-made burrata is paired with marinated papaya cubes for the next course, sprinkled with Dukkah, an Egyptian and Middle Eastern condiment consisting of a mixture of herbs, nuts, and spices, followed by a taste of fresh local shrimp paired with fresh mango salsa and tangy/sweet tamarind sauce.
Hand-rolled goat cheese gnocchi atop a simple put divine green pea mash with a sprinkle of coffee crumble was followed by the main course-lamb chops with a confit bell peppers and roasted garlic cream.
Dessert is a chocolate brownie paired with cactus sorbet.
The locally sourced ingredients and products include sourdough bread by T2Pan, quail eggs, burrata cheese, microgreens by Petite Greens, Pica di Papaya, honey from Eco Living Aruba, sorbet from Pico Bello, and shrimp from Aruba’s waters.
The service team of Papillon, Aruba’s famed French-Caribbean fusion restaurant located in The Village in Palm Beach, will be on hand to make sure each and every guest is graciously attended to with Aruba’s warm island hospitality.
The six-course dinner ($95 per person) is from 7pm to 10:30pm every Wednesday evening. An optional premium wine and cocktail pairing is also available.
